Ingredients:
JJ Bison chuckeye steak
Rosemary (2 sprigs)
Garlic (1 tablespoon)
Salt (to taste)
Pepper (to taste)
Butter (4 tablespoons)
Directions:
Take the chuck eye out of the refrigerator and let sit until it reaches room temperature.
Pat down the steak and season with salt.
In a cast iron skillet, heat 2 tablespoons butter until medium-high.
Sear your chuckeye steak on one side for 2-3 minutes and add pepper, then flip.
When you flip the steak, add 2 tablespoons butter, garlic, and rosemary to the pan.
Season the steak again with salt and pepper, then baste with the butter, garlic, and rosemary several times to keep the steak moist.
When the steak reaches 5 degrees below your desired temperature, remove from the pan and let rest (uncovered) on a cutting board for 5 minutes or so until it reaches your desired temperature.
