Bison Flat Bread Pizza with White Sauce


Ingredients:


Toppings:

  • Bison Chip steak

    • Salt and pepper to taste

  • Broccoli

  • Red Onion

  • Spinach

Flat Bread

  • 1 teaspoon active dry or instant yeast

  • 1 teaspoon granulated sugar

  • 3/4 cup warm water, (between 100-110°F)

  • 2 cups all-purpose flour or bread flour

  • 1 Tablespoon olive oil, plus 1 teaspoon for brushing the dough

  • 1 teaspoon salt

  • Optional: 2 - 3 tablespoons garlic (more or less if preferred)

  • Optional: 1 - 2 tablespoons Italian seasoning (more or less if preferred)

  • Foil

  • Non-stick cooking spray

White Sauce

  • 2 tablespoon unsalted butter

  • 2 tablespoon all-purpose flour

  • 1 1/4 cup milk (2% or whole milk)

  • 1/4 teaspoon sea salt

  • 1/8 teaspoon black pepper

  • 2 garlic cloves (or 2 teaspoons garlic powder)

  • 1/4 cup Parmesan cheese shredded

Directions (in suggested order):


Flatbread:

  1. Add yeast and sugar to a medium-sized bowl

  2. Add warm water to bowl and loosely cover the bowl with a towel for 5 minutes (If no bubbles have formed, redo the mixture)

  3. In a separate bowl, combine garlic, Italian seasoning, flour, and salt in a small bowl

  4. Pour the contents of the flour mixture into the yeast and sugar mixture

  5. Add olive oil

  6. Mix using a mixer, or spoon. The mixture should start to be shaggy with a little loose crumbs at the bottom of the bowl. By forming the ball you can place the extra bits in the ball.

  7. Flour a surface large enough to kneed your dough on

  8. Kneed the mixture for 2 minutes (ideally the mixture will be a semi-firm dough ball)

  9. In a medium sized bowl, grease the bowl and place the dough ball in the bowl.

  10. Cover this with foil for 45 minutes

  11. Pre-heat the oven to 475F

  12. Roll your flat bread into your desired shape. It is recommended to make sure air is out of the dough by flattening with a roller or punching the dough. Ideally, this will be very thin!

  13. And add sauce and toppings

  14. After all sauce and toppings are added, place in the oven for approximately 20-23 minutes (or until golden brown)

White Sauce:

  1. Add butter in a saucepan over medium heat. Whisk in the flour and stir for 1-2 minutes

  2. Slowly add milk, whisking constantly until the mixture is smooth

  3. Whisk in 1/4 teaspoon salt, 1/8 teaspoon black pepper, and garlic

  4. Add Parmesan cheese and whisk for 30 seconds.

  5. Remove from heat and continue whisking just until Parmesan is melted and sauce is smooth then set aside to cool before using for pizza.


Toppings:

  1. Dice or slice red onion

  2. Chop broccoli into small, bite-sized pieces

  3. Wash spinach

  4. Heat skillet to medium, and separate and cook chip steak

  5. Season steak with salt and pepper

After the dough is completed and the oven is pre-heated, add the sauce to the pizza, and then add toppings. It is recommended to add the spinach to the pizza ~10 minutes into the cooking process.
