We love these meatballs for baby-led weaning! We did add sauce when we served it to our baby and we recommend the same to help your little one swallow it easier.
We served these broccoli fritters and mac-and-cheese bites all with hidden veggies!
Ingredients:
1lb ground bison
1/2 red onion
~4oz broccoli
~4oz carrot (a medium carrot)
3 cloves garlic
1 medium sweet potato
1/2 teaspoon rosemary
3 tablespoons whole wheat flour
1 egg
Directions:
Preheat the oven to 400F.
Steam the broccoli, carrots, and sweet potato (skip this step if your food processor is great, but we steamed them!)
Put all the ingredients (including the vegetables in Step 1) in a food processor and blend until smooth and well combined.
Scoop the meat mixture into balls and put on a baking sheet.
Bake until the meatballs reach 165F, around 20 minutes on the middle shelf of the oven. If you'd like a crusty meatball, cook it at 450 for around 20 minutes.
Serve plain or with your favorite spaghetti sauce.
