Cranberry Roast


This cranberry roast is surprisingly delicious! I was looking at ways to make a 'sweet roast' that would stop my craving and I found it! It also works splendidly on sandwiches! We used the oven for this recipe, but if you'd prefer, it can also be done in a slow cooker.


Ingredients

  • 1 3-pound bison chuck roast

  • 1 tablespoon garlic powder

  • 1 tablespoon onion powder

  • 1 teaspoon pepper

  • 2 teaspoons salt

  • 1 (16-ounce) can of jellied cranberry sauce

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

Directions

  1. Preheat the oven to 200F.

  2. In a bowl, mix the garlic, onion, pepper, and salt, then cover the roast with the seasonings.

  3. In a bowl, break up the cranberry sauce.

  4. Cover the roast with the cranberry sauce and leave it uncovered in the oven for 1 hour.

  5. Check the temperature to see if the chuck roast is desired doneness, if not, cover the roast and check on it every 30 minutes until done. We recommend medium rare if using for sandwiches.

Rare: 115-120 degrees

Medium Rare: 121-129 degrees

Medium: 130-135 degrees
