Brazilian Bison and Black Bean Stew

Today we're going to share with you a classic Brazilian dish: bison and black bean stew! Brazilian food can be spicy, and if you don't like spicy food, you can still make this delicious meal! Just tone down the spice and it'll still be delicious.


Ingredients:

  • 1lb ground bison

  • 1/2 teaspoon garlic powder

  • 1/2 teaspoon onion powder

  • 1/4 teaspoon salt

  • 1/2 teaspoon smoked paprika

  • 1/4 teaspoon ground red pepper

  • 1/2 teaspoon ground black pepper

  • 1/4 teaspoon dried thyme leaves

  • 14 oz beef broth

  • 1/2 cup chopped onion

  • 2 cloves of minced garlic

  • 1 tablespoon flour

  • 2 cups thinly sliced fresh collard greens

  • Jasmine rice

Directions:

  1. Mix the 1lb of ground bison and garlic powder, onion powder, salt, smoked paprika, red pepper, black pepper, and thyme leaves together in a bowl until thoroughly combined.

  2. Add the mixture to a skillet and stir until the meat is cooked

  3. At the same time, start the rice so it'll be done at the same time (typically it takes 30 minutes or so)

  4. Add beans, broth, onion, garlic, and flour to skillet and stir occasionally for about 10 - 15 minutes.

  5. At this point, the beans should be mashable, so use a potato masher or spoon to mash the beans and continue stirring

  6. Add the collard greens and either stir or keep on top, and serve with jasmine rice
