Bison Tacos with Pico De Gallo


Realistically speaking, everyone reading this post has most likely read of or tasted pico de gallo. Pico de gallo is a fan-favorite of Mexican cuisine and is also extremely healthy. Typically, pico de gallo includes tomatoes, onions, cilantro, jalapenos, salt, lime, and chili for spice. It can be used in a variety of ways including dip, a topping for your perfect taco, or even eaten plain. For this recipe, we spiced up our ordinary taco and added pico de gallo for an extra healthy take on an already great dish. We like our tacos either deconstructed in a salad form, or using a hard-shell taco, but anyway you eat it will be delicious!


Ingredients:

  • 1lb ground bison

  • Hard or soft flour tortillas depending on what kind of taco you want

  • Fiesta blend cheese

  • 1 teaspoon chili powder

Bison Seasoning

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon onion powder

  • 1/4 teaspoon oregano powder

  • 1/2 teaspoon paprika

  • 1 1/2 teaspoon ground cumin

  • Salt and pepper to taste

Pico de Gallo

  • 1 cup chopped white onion

  • 1/4 cup lime juice

  • 1/2 teaspoon salt

  • 2 diced tomatoes

  • 1 diced yellow or red bell pepper

  • 1/2 cup finely chopped cilantro

  • 1/2 teaspoon chili seasoning


Directions:

  1. In a small bowl, combine the onion, lime, salt, tomatoes, diced bell pepper, cilantro, and chili seasoning.

  2. Taste the pico de gallo and add more salt if needed.

  3. Move the pico de gallo to the refrigerator and let sit for about 10 minutes to marinate.

  4. In a skillet, add the ground bison and stir occasionally until fully cooked.

  5. In a small bowl, combine the bison seasoning (above).

  6. After cooking, add the bison seasoning from the small bowl to the cooked ground bison and stir well.

  7. Serve your pico de gallo using a slotted spoon or serving fork to avoid a watery transfer, add some cheese if you'd like, and enjoy!
