Bison Quinoa Power Bowl
This is one of my favorite breakfasts I've had in a long time. It's a super easy breakfast to make that tastes delicious and can be made to impress!
Quinoa (enough for 1 serving)
Beef Stock (enough for 1 serving according to quinoa instructions)
JJ Bison Italian Sausage
Brown mushrooms, thinly sliced
Kale, finely chopped
Spinach, finely chopped
Olive Oil (2 tablespoons for vinaigrette, 1 for mushrooms)
3 tablespoons balsamic vinegar
2 tablespoons lemon juice
Salt and Pepper
Combine your quinoa and beef stock and make according to the instructions.
In a pan, cook your bison sausages until done (165F).
In a bowl, add balsamic, lemon, olive oil, and salt and pepper to taste.
Remove the sausage and add in your mushrooms and oil. Cook until the mushrooms are tender.
Add the mushrooms to the same pan until warm.
In a different pan, cook your eggs to your desired cook (e.g. scrambled) and add salt and pepper.
Cut your sausage and combine quinoa, mushrooms, eggs, kale, spinach, and sausage and add the lemon-balsamic vinaigrette to taste.
