Bison Breakfast Hash


Ingredients:

  • Egg

  • 1/4 Red Onion

  • A handful of Spinach

  • 1 Red Skinned Potato

  • Peppers

  • Bison sirloin (we used 4oz for this recipe)

  • 1/8 cup mozzarella cheese

  • 2 tablespoons total of garlic ((or to taste)

  • Pepper and salt to taste

  • 1 teaspoon Paprika (or to taste)

  • 1 teaspoon onion powder

  • 1/2 teaspoon red pepper flakes

  • 2 tablespoons olive oil

Directions:

  1. Cut peppers, dice red onion, and dice potato

  2. In a pot, boil water and when the water is boiling, add potatoes

  3. Heat skillet to low-medium heat and saute the cut peppers and onion with salt and pepper

  4. Remove sauteed vegetables and put in a container

  5. Drain potatoes

  6. Add 1 tablespoon to skillet

  7. Add the diced potatoes with salt, pepper, and 1 tablespoon garlic and stir until golden brown

  8. Remove the potatoes and add the potatoes to the container with vegetables

  9. In a small frying pan, heat the pan to low and crack an egg in the pan and cover the pan (the egg white will be white when cooked instead of transparent, and the yolk should have a slight white glaze)

  10. In a different skillet, heat the skillet to medium-high.

  11. Dice the steak

  12. Check on the egg, and if still transparent, continue to cook

  13. When the skillet gets hot, reduce to medium heat

  14. Add 1 tablespoon olive oil and sear and cook bison until cooked as desired

  15. If the egg is no longer transparent and instead white, add garlic, salt, and pepper and remove from the pan

  16. When the bison is cooked, re-add mixture (vegetables and potatoes) to the skillet and stir.

  17. Add the mozzarella cheese to the skillet with the steak and stir until mozzarella is slightly melted

  18. Remove the egg and steak mixture from skillet and plate the egg on top of the steak mixture

Meal Prep Instructions:

  • For meal prep, it is advised to add the mozzarella cheese after the steak/vegetable/potato mix has been heated and then stir

  • It is advised to make the egg every meal and not ahead of time


Calories:

  • Mozzarella cheese: ~45 calories

  • Spinach: ~7 calories

  • Red Onion: ~30 calories

  • Egg: ~70 calories

  • Peppers: ~23 calories

  • 2 oz red skinned potatoes: ~55 calories

  • 4 oz bison sirloin: ~128 calories

Total: ~358 calories
