What is a Dutch Oven Pot Roast?

Simple Ingredients, Big Flavor
This recipe uses simple ingredients that come together to create a hearty and satisfying meal.
Ingredients:
3 tablespoons olive oil
1 (3-5) pound boneless roast JJ bison, brisket, chuck roast, or round roast
3-4 cups beef stock or broth
4 tablespoons Worcestershire sauce
3 tablespoons diced garlic
1 teaspoon pepper
1 teaspoon salt
~1 pound red potatoes, cut into small pieces
2 medium onion, cut into wedges
~1 pound carrots, cut into 1 inch slices
4 sprigs fresh thyme
2 sprigs fresh rosemary
2 tablespoons corn starch
Directions:
Preheat oven to 350º F and take out your favorite Dutch oven.
Add olive oil into the bottom of a heavy Dutch oven and heat to medium heat.
Add roast and sear on all sides, then remove the roast and set aside to de-glaze the dutch oven.
With the dutch oven still heated, add beef broth and scrape the bottom of the dutch oven.
Add the onion, Worcestershire sauce, garlic, salt, peppers, thyme, and rosemary to the dutch oven, and add back in the bison. Add the potatoes on top of the bison.
Cover and place in the oven for 2 hours, then add the carrots.
Continue to roast until the roast is fork-tender and easily pulls apart easily.
Remove the dutch oven from the oven, and remove the juice.
Add about 1/2 cup of juice to a bowl and combine with the cornstarch until the cornstarch dissolves, then add the mixture to a pot heated to high with the rest of the juice.
Stir until the juice becomes a thick gravy.
