Roast Bison Deli

Our roast bison deli was a huge hit for meal prep and dinners. Not only did it reheat well for lunch, but tasted great for dinner too! We loved it and we hope you do too! It's super easy to make and can be made with simple seasonings found in every kitchen.

Ingredients:

  • JJ Bison's top round roast

  • ~3 tablespoons olive oil (to rub on the roast)

  • 2 tablespoon salt

  • 2 tablespoon rosemary

  • 2 teaspoons pepper

  • 2 tablespoon garlic

  • 1 1/2 tablespoon onion

  • 2 teaspoons paprika

  • 2 teaspoons thyme

Instructions:

  1. Remove your roast from the refrigerator and let it reach near room temperature while you pre-heat your oven to 475 degrees F.

  2. Combine all the spices above in a bowl.

  3. Pat your roast down until try and rub the roast with the olive oil, then rub in the seasoning mix until thoroughly coated.

  4. In an oven-safe pan, put your roast in the oven until it reaches the desired temperature - we recommend medium-rare!

  5. Remove the roast from the oven and wait at least 30 minutes before slicing**.

Rare: 115-120 degrees

Medium Rare: 121-129 degrees

Medium: 130-135 degrees


**Note, when you do slice the meat, it may be easier if you freeze the meat first. It doesn't have to be frozen through, but cool enough to handle effectively and slice thin.
