This guide explores the essential features and materials you need to consider when choosing a board specifically for preparing bison (or any!) meat.


Essential Cutting Board Features:

No matter the material, your cutting board should offer these key features:

  • Juice Groove: Catches meat drippings to prevent mess and potential bacterial growth.

  • Non-Slip Edge: Ensures stability and prevents accidents. A damp towel can be used in its place.

  • Handles (Optional): Allows for easy transportation of prepped meat.


Material Mania: Weighing the Pros & Cons

Now, let's delve into the world of cutting board materials:

  • Wooden Cutting Boards:

  • Pros: Eco-friendly, knife-friendly, repairable surface, and naturally anti-bacterial! (This is my favorite choice)

  • Cons: Require regular oiling, not dishwasher safe.

  • Plastic Cutting Boards:

  • Pros: Dishwasher safe, affordable.

  • Cons: Harbor bacteria, dull knives easily. If you are weary about microplastic it is best to avoid.

  • Glass Cutting Boards:

  • Pros: Easy to clean and disinfect.

  • Cons: Damages knives, slippery surface. (I think this one is the most inconvenient).


Choosing the Right Board for You:

The ideal board depends on your priorities. Wood offers a classic, knife-friendly option, while plastic caters to convenience. Glass provides a hygienic surface but comes at the cost of potentially sacrificing your knives.
