Mongolian Sloppy Bison


  • 1 pound ground bison

  • 1 onion, finely chopped

  • 1 - 2 serrano chiles (or jalapeños for a less-hot dish), seeded, chopped [optional depending on your taste of heat in a dish]

  • 3 tablespoons hoisin sauce

  • 2 tablespoons oyster sauce

  • 1 tablespoon soy sauce

  • 1 tablespoon honey

  • Hamburger buns


  1. In a large, hot skillet, cook ground bison, onion, and chiles [if deired]. Cook this mixture for about 10 minutes while making sure the bison is broken up and reaches at least 160°F.. Pour off drippings, as necessary.

  2. Stir in hoisin sauce, oyster sauce, soy sauce, and honey and bring the mixture to boil.

  3. After adding the sauces, reduce the heat; simmer 5 minutes while stirring.

  4. Add the mixture to the buns and enjoy!
