We love making meal prep here at JJ Bison because it saves money and helps us eat healthy all week!
Ingredients:
This recipe makes ~10 meals with ~4oz of bison per meal.
~3lbs of beef tenderloin or flank steak cut into thin pieces
~4 heads of broccoli (diced)
~4 carrots (peeled and julienned)
4 peppers (optional, sliced thinly)
2 1/2 tablespoons oil
Enough white rice for 10 portions of food
Salt and pepper
Brown Sauce
1 cup beef broth
1 1/2 tablespoons oyster sauce
1 teaspoon soy sauce
1 teaspoon sugar
1 tablespoon cornstarch (mixed with 1/2 teaspoon of soy sauce until dissolved)
1 tablespoon ginger
If you would like to pour the sauce in with the rice (recommended) make twice the amount and reserve the second half.
Directions:
Make the sauce by combining all the ingredients above.
Start the rice and thoroughly cook it according to the package instructions.
Put the sauce in a bag with the thinly sliced meat and let it marinate for at least 1 hour.
In a skillet, add the oil to the pan, add the bison, and stir until fully cooked.
Remove the bison, pour in all the vegetables, add salt and pepper, and stir.
Add the rice, bison, vegetables, and extra sauce (if desired) to your meal prep containers.
